Bacon & Maple Flavoured Sprouts

Prep time: 10mins | Cook time: 20mins

Ingredients

 1kg fresh (or frozen) sprouts  

 20ml maple syrup  

 100g cooked back bacon  

Method
  1. Using fresh sprouts, prepare and remove any damaged out leaves – tradition is to place ‘x’ on the bottom of the sprout, but this is not always needed – the fresher the sprout, the quicker they cook!  
  2. Add to hot boiling water and cook until soft to bite/cut – not very soft!  
  3. Drain and add back to the empty pan  
  4. If using frozen sprouts, add to a pan of boiling water and cook until soft to bite/cut – but not over-boiled!  
  5. Drain and add back to an empty pan  
  6. While the sprouts are cooking – slice your cooked bacon into 5mm wide strips – this can be done in advance, or just before you need it   
  7. Make sure it is crispy… but not burned 
  8. Mix back in with the cooked sprouts while they are still hot and drizzle over the maple syrup – this is best done when the sprouts are still hot as it will allow the syrup to warm and cover all the sprouts!  
  9. Mix and serve. You now have a new favourite side
