Breakfast Potato Hash

Ingredients
3x medium potatoes
2x rashers of back bacon
½ white onion, sliced
A handful of cheese
Cooking oil
Method
- Pre-heat oven to 190C
- Peel potatoes and dice into ¾ inch chunks
- Lightly oil a roasting tray and add the diced potato
- Place in the oven and cook for 25 minutes checking regularly
- Cook the bacon according to pack instructions, and once cooled cut into ½ cm squares
- Whilst the potato is cooking, sauté the sliced onions with a little oil
- Once the potatoes are cooked, remove from the oven and mix in the chopped bacon and onions, and top with cheese
- Return to the oven until the cheese has melted
- Serve with your favourite breakfast accompaniments
