Breakfast Potato Hash

Prep time: 10mins | Cook time: 35mins

Ingredients

 3x medium potatoes

 2x rashers of back bacon

 ½ white onion, sliced

 A handful of cheese

 Cooking oil

Method
  1. Pre-heat oven to 190C
  2. Peel potatoes and dice into ¾ inch chunks
  3. Lightly oil a roasting tray and add the diced potato
  4. Place in the oven and cook for 25 minutes checking regularly
  5. Cook the bacon according to pack instructions, and once cooled cut into ½ cm squares
  6. Whilst the potato is cooking, sauté the sliced onions with a little oil
  7. Once the potatoes are cooked, remove from the oven and mix in the chopped bacon and onions, and top with cheese
  8. Return to the oven until the cheese has melted
  9. Serve with your favourite breakfast accompaniments
