Breakfast Yorkies

Ingredients
Yorkshire pudding mix
Rapeseed oil
2 rashers of back bacon
½ red onion, diced
Cheese (optional, but encouraged)
Method
- Heat a lightly oiled Yorkshire pudding tray in a pre-heated oven at 240C for 20 minutes
- Cook bacon according to pack instructions. Once cooled, roughly dice
- Slice the red onion and sauté with a little oil for 5 minutes until soft
- Carefully remove the trays from the oven and add your Yorkshire mix equally into each hole of the tray, sprinkling diced bacon and cooked onion slices on top
- Be sure to close the oven door slowly so you don't force all the hot air out. Oh, and don't open the door to check on progress – the cold air will make your puds sag
- Place into the oven for approximately 25 minutes
- When they rise and look golden-brown and crisp on top, they're done
- Remove once ready and sprinkle cheese on top – yum!
